Liver Boost
Spring is a great time to make fresh vegetable juices to promote the liver’s function of smoothing out the flow of energy (qi) and blood in the entire body-especially the musculature. If you’ve been drinking a little too much alcohol since the holidays and/or are feeling tight muscles, irritable and out of balance-
try this instant mineral infusion:
carrot, ginger, beet, turmeric, apple
Wait there’s more- you can use the pulp from all the veggies to make a “beet loaf”!
If you use approx 5 carrots, 2 beets, an inch of ginger and turmeric plus one apple you should have 1 and 1/2 cups to mix with 1/4 cup of oil, 1/2 c. honey, 2 eggs and 1 tsp. of pure vanilla extract. Separately mix 1 & 3/4 cups of wild rice or other flour with 1/2 cup of arrowroot and 2 teaspoons of baking soda. Then pour the liquid mixture into the flour bowl and mix with a few swift strokes. Pour into a greased (I used butter) 9×5 loaf pan or some such and bake at 350 degrees for 60 minutes.
Let your beet loaf stand in pan for 10 minutes, then turn the loaf out onto a wire rack to cool.
